Aloo Paratha (Urdu: آلو پراٹھا ‎, Hindi: आलू पराठा, Marathi: बटाटा पराठा ) (Potato paratha) is an Indian recipe and one of the most popular breakfast dishes throughout western, central and northern regions of India. Aloo (potato) stuffed Parathas are basically unleavened dough stuffed with a spiced mixture of mashed potato, which is rolled out and cooked on a hot tawa with butter or ghee. Usually butter or chutney is served with Aloo Paratha and in rural parts of northern and western India, lassi is served along with it.

Cook potatoes till soft. Peel the skin and mash it well. Add chillies, cumin seeds, garam masala, salt, garlic, ginger, chat masala and coriander leaves. This completes the preparation of stuffing. Make 6 balls out of it.

Mix wheat flour, salt, 1tbsp oil, yogurt and little water in a bowl. Knead well to make a smooth dough. Roll the dough to make 6 equal balls. cover with a damp cloth and keep aside for 30 mins. Now roll the balls into 3 inch diameter round shape and put the stuffing ball on it. Now seal the dough with the stuffing inside. Now roll it to a 6-7 inch diameter parthas. Continue the same process for the remaining balls.

Heat a heavy bottom flat frying pan (tawa) and place the rolled out dough.

When bubbles starts forming apply 1/2 tbsp of oil on the top and flip it over to the other side. Cook for 1 minute and apply 1/2 tbsp of oil on the top and flip it again.
Cook both sides well. Add more oil if needed.

Continue same process for all the parathas.

Serve hot with raita & pickle.
