- 1/2 kg Ladies Finger (bhindi/bendakai/okra)
- 2 Onions thinly sliced
- Tomato - 2, sliced
- 2 tsp Ginger garlic paste
- 1 tsp Green chili paste
- 1/2 tsp Turmeric powder
- 2 tsp Red chili powder
- 2 tsp Coriander powder
- 1/2 tsp Amchur powder (dry mango powder)
- 1/2 tspKasuri Methi
- 1/2 tsp Garam Masala powder
- 1/2 tsp Cumin seeds
- 1/2 tsp Ajwain (bishop's weed/carom seeds/oma/jowan)
- 4 tbsps Cooking oil
- Salt to taste
- 1/2 cup Coriander leaves
This is basically a Punjabi Dish but nowadays cooked in all Indian cuisines.
Wash, pat dry and then cut the ladies finger, otherwise you will find it very slippery. Cut into 1 inch pieces.
In the same pan, add the remaining oil. Once hot, add cumin seeds & ajwain and allow them to crackle. Add chopped onions, when the onions turn transluscent add green chili paste and ginger garlic paste and saute for 3 minutes. Add red chili powder, turmeric powder, coriander powder, amchur powder and kasuri methi and mix.
Add chopped tomatoes and saute for 5 minutes with lid.
Add the okra/bhindi and mix well. Cook without lid for 10 minutes.
Add salt to taste and garam masala powder and mix.
Turn off heat. Garnish with coriander leaves.
Serve hot with rice & dal or rotis.
