- 5 cups cooked rice
- 2 chicken breasts copped into thin strips
- 1 tbsp soya sauce
- 1 medium onion chopped finely
- 4 spring onions chopped
- 4 cloves garlic, minced
- 1 inch ginger, julienned
- 2 green chilies, thinly sliced (or less fochopped
- 2 egg
- 1/2 cup fresh green peas
- 6 tbsp oil
- 3 tbsp chicken stock
- 3 tbsp Thai fish sauce
- 2 tbsp soya sauce
- 1 tbsp lime juice
- 1/4 tsp ground white pepper
- 1/4 tsp sugar
Fried rice is made from steamed rice stir-fried in a wok, often with other ingredients, such as eggs, vegetables, and meat. It is sometimes served as the penultimate dish in Chinese banquets (just before dessert). As a home-cooked dish, fried rice typically is made with leftover ingredients from other dishes, leading to countless variations.
In a bowl mix the chicken strips with 1 tbsp soya sauce and keep aside for 30 mins.
Take 2 tbsp oil in your hand and mix the rice. Make sure there are no lumps left. Keep aside.
In a small bowl combine all the sauce items. Make sure the sugar gets dissolved.
Heat 3 tbsp oil in a frying pan. When the oil is smoking add the onion, garlic, ginger & chillies. Stir fry still onions turn transluscent. Add the chicken strips and stir fry in high heat for 4-5 minutes. green peas and stir fry for 2 more minutes. Add the spring onions and stir fry for 30 seconds. Now add in the rice. Stir gently so that the rice is mixed with the other ingreients. Now add the sauce slowly stirring the rice. Stir fry for another 6 to 7 minutes. If you are an experienced hand toss the rice. Now push all the rice to the side of the pan making a hollow in the center. Add 1 tbsp oil and break the eggs. Quickly scramble the eggs stirring it continuously for 2 minutes. Now mix the rice and the egg and stir fry for 1 more minute.
Your Chinese chicken fried rice is done. Serve hot.
