• For the roti:
  • 2 cups all purpose flour
  • 1 tbsp oil
  • 1/4th tsp salt
  • 1/2 cupwWarm water
  • For the roll:
  • 1 cucumber chopped finely
  • 1 tomato chopped finely
  • 1 large red onion chopped finely
  • 2 green chillies chopped finely
  • 1 carrot grated
  • Salt to taste
  • 1/2 tsp chat masala (optional)
  • 6 tbsp oil
  • 1 lemon halved
  • 6 tbsp tomato ketchup
  • 3 tbsp chilli sauce
  • 6 eggs

Egg roll is a very famous snacks of Kolkata. It is rated as the second favourite street food in Kolkata.

Take the flour, salt and oil in a wide mixing bowl. Add the warm water graudally while mixing everything together. Apply few drops of oil to the vessel and the dough. Knead the dough nicely to make it soft and pliable. Cover it with moist kitchen towel and let it rest for atleast 15 minutes. Make 6 lemon sized balls of the dough. Dip each ball into dry flour and roll out 6 inch diameter round rotis using a roling pin. Heat a heavy bottom flat griddle (tawa) and put a roti on it. Flip it after 30 seconds. After 30 more seconds press on all sides with a cloth or spatula. Flip again and continue the process till the roti is cooked. I hardly takes 90 seconds. Make sure not to burn the rotis.

Mix the chopped cucumber, tomato, onion, green chillies and grated carrot together and keep aside in a bowl. Heat a heavy bottom flat griddle (tawa) and spread 1/2 tbsp oil on it. Break 1 egg in small bowl add a pinch of salt and whisk it. When the oil is hot spread the whisked egg in the same shape and size of the roti. Before the egg sets, place a roti on the egg and press it gently. Cook for 30 second. Spread 1/2 tbsp oil over the roti and flip it. Cook another 30 seconds and transfer it to kitchen board with the egg side up. Now take a portion of the vegetable mix and spread it length-wise on it. Spread 1 tbsp tomato ketchup and 1/2 tbsp chilli sauce over. Squeeze a little lemon juice. Sprinkle a pinch of salt and chat masala.

Roll up the roti with the vegetables in the center. Wrap up the roll into lunch paper or greaseproof paper to hold it together. Repeat the same process for the rest of the rolls.
