- 1 kg Lamb preferably on bones.
- 1 cup Vegetable oil.
- 1/2 Cup Yogurt.
- 7 whole Cloves.
- 2 inch cinnamon stick.
- 4 bay leaves.
- 4 pods coarsely grounded Black cardamom.
- 5 peppercorns
- 1 tsp sugar.
- 1 tbsp kashmiri Chili Powder.
- 1/2 tsp turmeric powder.
- 1 tbsp dried ginger paste.
- 1 tbsp Fennel Powder.
- 1 tsp Salt.
- pinch of Asafoetida Powder.
Rogan josh (or roghan josh) is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Rogan means “oil” in Persian, while josh means “heat, hot, boiling, or passionate”. Rogan josh thus means cooked in oil at intense heat. Another interpretation of the name rogan josh is derived from the word rogan meaning “red color” (the same Indo-European root that is the source of the French “rouge” and the Spanish “rojo”) and josh meaning passion or heat.
Rogan josh was brought to Kashmir by the Mughals, whose cuisine was in turn influenced by Persian cuisine. The unrelenting summer heat of the Indian plains took the Mughals frequently to Kashmir, which has a cooler climate because of its altitude.
Cut mutton into 12 big pieces.
Wash the meat pieces and pat dry.
In a bowl,mix the meat and yogurt together and leave it aside for 25 minutes.
Heat oil in a large nonstick kadhai/wok over medium-high heat.When the oil heats up add asafoetida powder and bay leaves followed by meat and yoghurtmix.
Add cloves,cinnamon stick,coarsely grounded black cardamom,peppercorns and keep on constantly stirring for a 10 minutes .
Stir fry till you see the oil and yogurt separate and that would happen when all the water dries up.
Add Red chilli powder, turmeric powder,sugar, ginger paste, fennel powder and salt and constantly stir for about 2 minutes till the spices stick to the meat and almost all water dries up .
Next add 3 cups of water.
Stir well transfer to a pressure cooker. Cook untill 3 whistles. If you don’t have a pressure cooker cook in low heat in a pan with a lid for 25 mins. You might have to add a little more water.
Thats it Mutton Rogan Josh is ready. Serve with hot steamed rice!
