- 1/2 kg spinach (palak) washed and chopped finely.
- 200 gm cottage cheese (paneer) cut into 1/2 ibch cubes
- 6 tbsp oil
- 1 large onion chopped finely
- 8 cloves garlic chopped finely
- 1 inch piece ginger grated
- 3 green chillies chopped finely
- 1/2 tsp turmeric powder
- 2 medium tomato pureed
- Salt to taste
- 1 tsp garam masala
- 2 tbsp fresh cream
Palak paneer (Hindi: पालक पनीर, Urdu: پالک پنیر) is an Indian and Pakistani dish consisting of spinach and paneer (Indian farmer’s cheese) in a thick curry sauce based on pureed spinach. It is a popular vegetarian dish.
Boil water in a vessel add a pinch of salt and the chopped spinach. Blanch the spinach for 2 mins. Drain the spinach and run it through cold water to make it cold. Drain and blend in a mixer to a smooth paste and keep aside.
Heat 1 tbsp oil in a flat nonstick pan and spread the oil. Now put the paneer pieces and fry till they are light brown. Make sure you turn the pieces on all sides so they are evenly fried. It will take you maximum a minute or two. Don’t over fry. Keep aside.
Now heat remaining oil in a heavy bottom pan. Add the chopped onions and saute till the onions turn translucent. Add the garlic, ginger, green chillies and turmeric powder and saute for a minute or two.
Now add the tomato puree and fry till the oil separates. Now add the spinach paste and 1/4th cup water and bring it to boil.
When it starts to bubble add salt, garam masala, cream and the fried paneer. Stir gently and cook for another 2 minutes.
Your palak paneer is ready.
Serve with any Indian flat bread.
